Egg White — 3 tbsp powder + 2 tbsp water = 1 white. Fresh egg white is the original ingredient. Whips similarly.
Cream of Tartar — ¼ tsp cream of tartar per 1 egg white (whip whites with tartar to stiff peaks). Cream of tartar stabilizes egg whites to create meringue without commercial meringue powder. Per Corriher (BakeWise), meringue powder contains dried egg whites, sugar, and cream of tartar — the acid stabilizes the foam by lowering pH. Using fresh egg whites with cream of tartar achieves the same result with more volume and better flavor. This is the traditional French meringue method.
Aquafaba — 3 tbsp aquafaba per 2 tsp meringue powder. Aquafaba whips like egg whites and is vegan. Best in meringues and royal icing.
